Stuffed Tomatoes with Zucchini

I made this dish to satisfy the palate of the vegetarians who were in the guest list.
This dish can be served as an entree, main or as an accompaniment
One would be surprised that this simple dish can do such wonders to the palate of  everyone


 
Scoop tomatoes and save the tomato flesh as shown in the picture

Blend mushrooms and grate carrots

Chop onions and dice zucchini

Olive Oil Salt Pepper


Heat Oil in a pan


Add onions chopped and saute
Add tomato flesh and herbs



Saute till the tomato has broken down



Add grated carrots

 sweat carrots
 cook till done
Add blended mushrooms
Cook till done
Add diced Zucchini
Mix well to blend
Cook till done
 Check seasoning
Take off from heat and let cool
Cover to keep the juices in condencation
 give it stir to cool

This is the mix


Stuff tomatoes and finish as shown

Hold the tomato and dip in oil
Now carefully singe the tomato base in a hot frying pan


Hold till it stands by itself
Take care not to burn the fingers
Cook in oven for 30 min at 150*C
